When you kill something evil, if you don't get rid of the evil in it, then other creatures will eat it and absorb that. Then, others will eat that creature, and so on, until the evilness is spread further than just through the original thing you killed. But so long as you know how to rid the evil from yourself, then it's fine if you eat it.
